Breakfast Enchiladas with Ham and Peppers

Breakfast Enchiladas are stuffed with ham, cheese, onions and diced red peppers. This is a great make ahead breakfast for Sunday Brunch or when you have company for the weekend.
Ingredients

  • 2 cups (151 grams) diced cooked ham
  • 1 bell pepper, diced
  • 8 green onions, finely sliced
  • 2 cups (227 grams or 8 ounces) shredded cheddar cheese

Savory Marinade for Grilled Chicken

So good. Can freeze before cooking in marinade. Then just pull out of freezer when you want a quick grilled main dish. Also can use boneless breast or thighs adjusting cooking time.

  • 1/2 cup olive oil
  • 1/4 cup white wine vinegar
  • 3 T full fat mayo (do not use Miracle Whip, it has added sugar)
  • 1-2 T Worcestershire sauce (I used 1 T Worcestershire sauce for chicken but when I used it on pork or beef I increased it to 2 T.)
  • 1 T lemon juice, preferably fresh squeezed
  • 1 tsp. Veg-Sal or salt
  • 1 tsp. fresh ground black pepper
  • 1 T Poultry Seasoning
  • 1 T garlic puree or garlic powder
  • 1 T sweet paprika, preferably Hungarian paprika (It comes in a tin instead of a jar)
  • 1/2 T onion powder
  • 1 tsp. thyme (optional)

Chopped Buffalo Chicken Salad: Salad greens and veggies mixed with ranch dressing then topped with buffalo sauce covered chicken, (buffalo sauce plus 1T butter and 2T brown sugar, heated until bubbly)

Cake Batter Truffles

In the bowl of your electric mixer beat together 1 1/2 cups of flour, 1 cup of yellow cake mix, 1/2 cup of unsalted, room temperature butter and 1/2 cup of white sugar until mixture comes together. Add in 1 teaspoon of vanilla, 1/8 teaspoon of salt and 3-4 tablespoons of milk. Use the milk to control the consistency. Start with 2 tablespoons and work your way up {I used the full 4 in my batter}. Finally mix in 2 tablespoons of sprinkles. Roll the dough into 1-inch balls. Place on a cookie sheet and allow the batter to chill for 15 minutes in the fridge or freezer.
