eggplant prosciutto rolls

Eggplant Prosciutto Rolls (i've made these before - for best results either hold the rolls together with toothpicks of use cooking string.)
Ingredients

  • 1 lg (1.25 lb) eggplant
  • ¼ lb thinly sliced prosciutto
  • 15 oz. ricotta
  • ½ cup shredded Italian cheese blend
  • 1 tsp Italian seasoning blend
  • as needed non-stick spray
  • ¼ tsp each salt and pepper

RED SAUCE

  • 1 (28 oz.) can crushed tomatoes
  • 3 oz. tomato paste
  • 1 Tbsp oregano
  • ½ Tbsp brown sugar
  • ½ tsp minced garlic
  • to taste salt and pepper
