Weeknight Chicken Fried Rice

Weeknight Chicken Fried Rice - Simple and easy weeknight dinner for the family :)
Ingredients

  • 3 cups cooked white rice
  • 3 tbsp. sesame oil
  • 1 cup frozen vegetables (like peas and carrots)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 eggs, beaten lightly
  • 1 cup cooked chicken, diced or shredded (use this method or a store-bought rotisserie chicken).
  • 1/4 cup soy sauce

Crockpot Apple Crisp

An easy way to make a wonderful comfort food using those abundant fall apples!
Ingredients

  • 6-8 medium baking apples (I like to use at least half granny smith for their tartness)
  • 1 tsp lemon juice (from the container is just fine)
  • 2/3 cup quick-cooking oats
  • 2/3 cup flour
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ½ cup butter, softened (not melted)

Easy Scalloped Potatoes

Ingredients

  • 8-10 medium potatoes (Russet or Yukon Gold are best)
  • ¼ cup cold butter, cut into small squares
  • 2 Tbsp. flour
  • 2 cups shredded cheddar cheese, divided (old or medium cheddar is best)
  • 2 cups milk (I used 2%)
  • 1 tsp. coarse salt
  • 1 tsp. dried mustard or paprika

apple cranberry hand pies

apple cranberry hand pies - these were good! I suggest add some extra (brown) sugar to the filling. Made crust w/o food processor and it came out fine.
Ingredients
DOUGH

  • 1.75 cups all-purpose flour
  • 1 tsp sugar
  • 12 Tbsp (1.5 sticks) cold butter (salted)
  • ¼ cup cold water

FILLING

  • 2 small apples
  • ¼ cup dried cranberries
  • 1 Tbsp sugar
  • ½ Tbsp all-purpose flour
  • ¼ tsp cinnamon
  • ⅛ tsp ground cloves

This recipe might be my new all time favorite chicken recipe. It's that good! I just made it and it was so easy and so good.

chocolate banana baked oatmeal

chocolate banana baked oatmeal- like brownies but healthier - I love this. Next time I will add a little salt and more sugar in it and probably a little less cocoa powder. Perfect for breakfast:)

Chili Cheese Beef n Mac I make this for dinner a lot. It's so easy. I use ground turkey and salt free broth, and half the smoked paprika..it's strong! Cook this.... Yummmmm
