Lighter Sesame Chicken

This Sesame Chicken is just sweet enough, and you’ll flip over the faux-battered technique that gives each piece of chicken a nice and delicate crunch.

Ingredients

  • 1/2 cup brown rice
  • 1/4 cup honey
  • 2 Tablespoons sesame seeds
  • 2 Tablespoons soy sauce
  • 1 garlic clove, minced
  • 1 egg white
  • 2 Tablespoons cornstarch
  • 2 small chicken breasts (12oz), cut into 2″ pieces
  • salt & pepper
  • 1 Tablespoon vegetable oil
  • 2 green onions, chopped
  • 2 cups broccoli florets

Caramel Brownie Bites

Caramel Brownie Bites - They taste yummy warm and gooey out of the oven or after they have cooled and all the flavors have had a chance to meld together.
Ingredients

  • 1 bag (14 oz) caramels, unwrapped
  • 1/2 cup whipping cream
  • 1 box Pillsbury® refrigerated pie crusts, softened as directed on box
  • 1/2 cup Fisher® Chef’s Naturals® Chopped Pecans, finely chopped
  • 1 box (15.9 oz) Pillsbury® Chocolate Extreme Premium Brownie Mix
  • 1/3 cup Crisco® Pure Canola Oil
  • 3 tablespoons water
  • 1 LAND O LAKES® Egg
  • 2/3 cup Hershey's® semi-sweet chocolate baking chips
  • 1 tablespoon light corn syrup

No-Bake Chocolate Chip Granola Bars

No bake choc chip granola bars. Uses oatmeal and rice krispies. Looks pretty easy and my kids inhale granola bars. 1/12 Yummy and easy. As is will make an 8x8, double for a 9x13. Cook butter mixture an extra minute so it's sure to set. Could add lots of other stuff for varieties.
Ingredients

  • 1/4 cup butter
  • 1/4 cup honey
  • 1/3 cup packed brown sugar
  • 2 cups quick cooking oats {not rolled oats!}
  • 1 cup crispy rice cereal
  • 1/2 teaspoon vanilla
  • 2 tablespoons mini chocolate chips

Healthy Sesame Chicken

Healthy Sesame Chicken. Made this tonight and it was delicious. Very little oil, much healthier than take out!
Ingredients

  • 1/2 cup Honey
  • 5 tablespoons Tamari
  • 1/2 to 1 teaspoon Sesame Oil
  • 4 tablespoons Sesame Seeds
  • 2 Garlic Cloves, pressed in a garlic press
  • 2 Egg Whites
  • 4 tablespoons Corn Starch
  • 3 medium sized Chicken Breasts, cubed into 1 inch pieces
  • Kosher Salt and Black Pepper
  • 1/2 Red Bell Pepper, diced
  • 1/2 Green Bell Pepper, diced
  • 1 medium Yellow Onion, diced
  • 4 Green Onion, sliced
  • 3 tablespoons Coconut Oil
  • 4 servings of Prepared White or Brown Rice
  • Consider adding a tablespoon of minced fresh ginger and/or a teaspoon of chili paste to the sesame sauce for a boost of flavor!

Cheesy Garlic Cauliflower Bread Sticks

Cheesy Garlic Cauliflower Bread Sticks (pretend bread). Next time I won't do the butter layer before the cheese (just add more garlic to the crust)...don't think you need it and definitely don't need the extra calories. But it is for sure cheesy and garlicky.
Ingredients

  • 1 cup cooked, riced cauliflower
  • 1/2 cup shredded mozzarella cheese 
  • 1/2 cup Parmesan cheese 
  • 1 egg, beaten 
  • 1 tsp dried oregano 
  • 1/2 tsp crushed garlic 
  • 1/2 tsp garlic salt 
  • olive oil 

For Topping:

  • 2 tablespoons softened salted butter
  • 2 cloves garlic, finely minced
  • 1/4 cup grated parmesan cheese 
  • 1/4 cup grated mozzarella cheese
  • *Optional Marinara sauce for dipping

Stuffed Pizza Rolls

This is such a smart idea!! I wish our supermarket would sell pizza dough, then it would be so simple to make!
Ingredients:

  • 1 roll refrigerated pizza dough* (or make your own)
  • marinara/pizza sauce (click here to make your own)
  • 2 T grated Parmesan cheese (sorry, I don’t know how to make that)
  • 1 T olive oil or melted butter
  • 1/2 t garlic powder
  • 1 t dried Italian seasoning
  • mozzerella cheese
  • Pizza toppings of your choice: ie, ham and pineapple, pepperoni slices, sausage, etc.
